Roasted Red Pepper Hummus With Crackers

 

Yield: 6 Servings

 

3 red bell peppers, quartered

5 garlic cloves, skin left on

Avocado oil spray

Sea salt and black pepper to taste

2 cups canned or home-cooked chickpeas

3 Tbsp lemon juice

1 tsp smoked paprika

Seeded crackers

 

Preheat the oven to 400° F.

Place the red bell peppers and garlic on a baking sheet and spray with the avocado oil. Season with salt and pepper to taste and bake for 30 minutes.

Remove the baking sheet from the oven and let it cool for a few minutes. Once it is cool enough to handle, remove the garlic cloves from their peel. Place them in a food processor, along with the roasted red peppers, cooked chickpeas, lemon juice and smoked paprika. Process until the mixture is smooth and creamy.

Transfer the hummus to a bowl and serve with crackers.
